Crawfish and Shrimp Dressing

Crawfish and Shrimp Dressing

Ingredients:

2 sticks butter

2 c. finely chopped onion
1 c. finely chopped celery
1 c. finely chopped green bell pepper

1 c. finely chopped green onion
3 tsp. minced garlic

Mix together a mixed seasoning and set aside:
1 tsp.each salt and pepper (mixed)
1 tsp. cayenne pepper
1 tsp. onion powder
1/2 tsp. thyme
1/4 tsp. oregano

½ lb. peeled shrimp, chopped
12oz pkg. peeled crawfish, chopped

2 c. fine dry bread crumbs, divided in half

3 T. unsalted butter

½ cup finely grated Parmesan cheese mixed with 2 beaten eggs


Directions:

1. In a large nonstick skillet over high heat, add the sticks of butter.
2. When butter is half melted, add onions, celery, and bell pepper.
    Saute’ about 3 to 4 minutes stirring occasionally.




3. Add mixed seasoning, green onions and garlic.  Cook 2 to 3 minutes more.
4. Add shrimp and crawfish and cook 5 to 7 minutes more, stirring frequently.



5. Let sediment coat pan bottom, then scrape bottom well and
add 1 c. bread crumbs and stir well.  Cook until mixture sticks (about one minute).



  
6. Stir and scrape pan well, add unsalted butter.
7. When butter melts, stir in remaining bread crumbs and remove from heat.
    Add the cheese and egg mixture and mix well.



8. Transfer to shallow pan (9" x 9"x 2" or something similar) and refrigerate overnight.



9. Bake in a pan at 350 degrees until hot and serve.

Yield: Enough dressing to serve 8-10
